Dr. LoPresto received a BS in Nutrition Science from UC Davis, an MS in Nutritional Sciences and RDN credential from UC Berkeley, and a Ph.D. in Public Health Sciences from UC Davis School of Medicine. She has been a registered dietitian nutritionist for more than 30 years and has a broad range of professional experience from hospitals to community settings to pre-health professional education. Her career began as a clinical/research dietitian at UCLA and then Stanford before transitioning to health education and public health after seeing that many chronic conditions could have been prevented. She then served as a consultant for the Marin County Department of Health and Human Services and County Office of Education as well as the California Healthy Kids Resource Center on a range of health education and food equity projects and to support the development and implementation of federally mandated local school wellness policies to prevent childhood obesity. Dr. LoPresto completed a Ph.D. in public health to enhance her program and policy analysis skills. Before joining the Pacific faculty in 2022, she served as faculty at Dominican University of CA in San Rafael for 18 years.

Dr. LoPresto is active in the local and sustainable food movement and recognizes that protecting the environment is vital to ensuring food and nutrition security. She believes that nutrition professionals play a critical role in generating positive changes to food environments that can support the transition to a more just and sustainable food system.  Her research uses mixed methods designs to analyze and translate scientific evidence into actionable policies and strategies that promote a One Health approach to food environments. One Health recognizes the interconnection between people, animals, plants, and their shared environment.
